I’m continuing to be impressed with the whiskey Mile High Spirits continues to put out and look forward to what additional years in the barrels do to their whiskey. This is a unique tasting bourbon that will scratch the itch of those looking for a spicy whiskey but don’t want to necessarily pour a more traditional spicy rye whiskey. Ending on a chocolatey spice note, the finish is lingering, riding a nice dose of spice. The palate brings in spice and chocolate notes and adds in drier flavors of oak and leather, which produces a nice concoction of spicy dry flavors. An extra year of aging continues to enhance what can best be described as “one unique sip.” The sip starts with an undeniable dose of Red Hots candy scent that mingles with light toasted oak and chocolate.
The last time we had a chance to taste their Fireside Straight Bourbon Single Barrel was when the whiskey was bottled at 4-years-old. Mile High Spirits is based out of Denver, Colorado, and goes by the motto, “We take our spirits seriously, but not ourselves.” During my visit there, I found it to be a fun quirky space that puts out some really unique tasting whiskey.
